About Shokaku Noodle
麺匠 松鶴について
Shokaku Noodle is a specialized ramen restaurant operated by Tsuruya Food Co., Ltd., a long-established noodle manufacturer with a history dating back to 1902. For over a century, we have dedicated ourselves to the craft of noodle-making.
「麺匠松鶴（めんしょう しょうかく）」は、明治35年（1902年）から100年以上にわたり麺づくりに邁進してきた老舗製麺所、つるや食品株式会社が運営する直営ラーメン店です。
Today, Japanese ramen is a culture loved all over the world. However, we realized that many people still cannot enjoy this culture due to diverse dietary habits and cultural backgrounds. In particular, there are still few places where Vegan and Muslim guests can truly feel at ease.
今や日本のラーメンは世界中で愛される文化となりました。しかしその一方で、食の習慣や文化の違いによって、心から安心して楽しめる一杯に出会えない方々がまだたくさんいらっしゃいます。
“Using the craftsmanship we have perfected over a century, we want to deliver the joy of ‘Oishii’ (delicious) to those who have never had the chance to experience Japanese ramen.”
Driven by this mission, we have embarked on a new challenge: to broaden the reach of Japanese ramen culture by creating a space where everyone is welcome. To ensure even more guests can dine with confidence, we also offer Gluten-Free options.

- What kind of soup does your vegan ramen use?
ヴィーガンラーメンはどんなスープを使っていますか？ -
Our signature broth is crafted from a base of onions, celery, and carrots, combined with a unique blend of kombu (kelp) and garlic to create a rich, deep umami flavor. It is 100% plant-based and contains no animal products.
私たちのラーメンのベースのスープは、玉ねぎ・セロリ・ニンジンをベースに、昆布とにんにくを独自にブレンドしたコクと旨味を引き出した秘伝のスープです。動物性食材は一切使用していません。 - Do you have any non-vegan dishes?
ヴィーガン向け以外の料理もありますか？ -
Yes. We offer a wide range of menu items to satisfy customers who crave meat dishes, such as luxurious Wagyu beef ramen made with Halal-certified Wagyu beef and roast chicken ramen cooked carefully in-house. Naturally, we use different cooking methods and utensils to prepare and serve vegan ingredients.
はい。HALAL認定の和牛を使用した贅沢な和牛ラーメンや、じっくりと店内で調理したローストチキンラーメンなど、お肉料理を食べたいお客様も満足いただける幅広いメニューをご用意しています。当然VEGAN向けの食材とは別の工程・調理器具を用いて調理提供しています。 - Is gluten-free food available?

Yes, we do offer gluten-free options. We offer gluten-free ramen made with special noodles based on rice flour. The soup can also be changed to be gluten-free. This means that those with wheat allergies or gluten intolerances can enjoy our food with peace of mind.

We offer takeout for our donburi (rice bowl) and side dishes.
However, we currently do not offer takeout for ramen to ensure that it is served in its best possible condition.
